Apple Cinnamon Oat Cups

I've been including these oat cups in my meal prep since September! After lots of tweaking, I've perfected the recipe! They are SO DELISH - you will want to make these too :) Feel free to omit the chocolate chips - the recipe will still be fantastic and a touch healthier of course.

These muffins are: Vegan, gluten free, and great for "on the go"!

Ingredients

  • 2 cups (160g) oats

  • 4 tbsp (24g) powdered peanut butter

  • 1.75 scoops (54g) protein powder

  • 4 individual packets stevia (you can omit these if you use chocolate chips)

  • 1 tsp baking powder

  • Cinnamon and lots of it!

  • 1/4 tsp pink himalayan salt

  • 1 large apple, diced (approx 200 g)

  • 1 cup chocolate chunks (approx 100g) Enjoy Life chocolate chunks

  • 1 1/4 cups non dairy milk (300ml)

Directions

  1. Preheat oven to 375

  2. Place all dry ingredients in a bowl and mix well

  3. Dice apple and add to bowl

  4. Add chocolate chips

  5. Pour in non dairy milk and mix well

  6. Scoop mixture in to muffin cups

  7. Bake for 20-22 minutes

NOTE: I strongly suggest using muffin liners. Not only are they super cute, the tins are a b*tch to clean!!

87 calories

6.5g protein

13g carbs
