Sweet Potato Avocado Brownie Bites
A couple of weeks ago I hosted some of my girlfriends for brunch. I had come across a recipe for these delicious-sounding brownie bites and decided to include them in my menu.
Boy am I glad I did!

I used this recipe but had to tweak it a bit for what I had on hand.
Sweet Potato Avocado Brownie Bites
Ingredients
1/2 cup pureed sweet potato
1 small avocado
2 eggs
1/3 cup honey
2 tbsp melted coconut oil
3 tbsp spelt flour
1/3 cup cocoa powder
1 1/2 tsp baking soda
1/4 tsp pink salt
1/3 cup chocolate chips
Directions
Preheat oven to 350 F and prepare muffin tins (liners or cooking spray)
Place all ingredients (except chocolate chips) in to blender and blend until smooth
Mix in chocolate chips by hand
Fill each cup with batter
Bake for 20 minutes
Remove from oven and let cool for 5 minutes then transfer to a cooling rack
Note: I don't know about you but I don't usually have pureed sweet potato on hand! I chopped up a sweet potato in small pieces (for quicker cooking) and boiled it until soft. I then drained the water and mashed it up with a fork! I used a 1/2 cup for the recipe and ate the rest :)
