Sweet Potato Avocado Brownie Bites

A couple of weeks ago I hosted some of my girlfriends for brunch. I had come across a recipe for these delicious-sounding brownie bites and decided to include them in my menu.

Boy am I glad I did!

Look at this!!!!

I used this recipe but had to tweak it a bit for what I had on hand.

Sweet Potato Avocado Brownie Bites

Ingredients

1/2 cup pureed sweet potato

1 small avocado

2 eggs

1/3 cup honey

2 tbsp melted coconut oil

3 tbsp spelt flour

1/3 cup cocoa powder

1 1/2 tsp baking soda

1/4 tsp pink salt

1/3 cup chocolate chips

Directions

  • Preheat oven to 350 F and prepare muffin tins (liners or cooking spray)

  • Place all ingredients (except chocolate chips) in to blender and blend until smooth

  • Mix in chocolate chips by hand

  • Fill each cup with batter

  • Bake for 20 minutes

  • Remove from oven and let cool for 5 minutes then transfer to a cooling rack

Note: I don't know about you but I don't usually have pureed sweet potato on hand! I chopped up a sweet potato in small pieces (for quicker cooking) and boiled it until soft. I then drained the water and mashed it up with a fork! I used a 1/2 cup for the recipe and ate the rest :)
