Spelt Protein Pancakes

I know I post a lot about pancakes. Do you blame me? Pancakes are heavenly..

I recently revamped my normal recipe and the results are pancakes with amazing texture and taste that knock my old ones out of the park.

Here is there recipe and some drool-worthy pictures :)

Spelt Protein Pancakes

For entire yield of recipe (number of pancakes depends on size):

485 calories - 54 protein, 37 carbs, 13 fat


  • 1/2 cup egg whites

  • 1 egg

  • 1/4 cup spelt flour

  • 1 scoop protein powder

  • 2 tbsp powdered peanut butter

  • 1 tbsp vegan chocolate chips

  • Chocolate walden farms syrup to taste


  • In a bowl, mix together all ingredients except the chocolate chips and syrup until smooth

  • On the stove top, heat a skillet or pan to medium/high heat and coat with whatever cooking spray or oil you wish

  • Pour desired amount of pancake mix in to pan

  • As the edges start to cook sprinkle some chocolate chips over the mixture in your pan

  • Once cooked through, flip and cook the other side

  • Repeat process until all of the mixture is used

  • Sprinkle leftover chocolate chips over the cooked pancakes, top with syrup and dig in!
