Cucumber Tomato Dill Salad
My sister had her engagement party this weekend and many of us contributed to the food. I didn't want to bake because I didn't want to tempt myself so I made a huge salad! I did not follow a recipe but I measured everything so that I could share this new recipe with all of you.
So here we have:
Cucumber Tomato Dill Salad
For one serving spoon-full (about 1/20th of the recipe)
24 calories: 3.4 carbs, 0.7 protein, 1.1 fat
Ingredients:
2 large English cucumbers
8 on-the-vine tomatoes
3/4 cup fresh dill (not packed in)
3 tsp grainy dijon mustard
1 tbsp balsamic vinegar
Juice of 1 lemon
4 tsp extra light extra virgin olive oil

Directions:
Dice the cucumbers and tomatoes and place them in a large bowl
Chop the dill and add to the other vegetables
In a small bowl, whisk together mustard, vinegar, lemon juice and olive oil
Pour the dressing over the salad
Mix to coat evenly and store covered in the fridge
When you serve it be sure to give it a good mix. I also found that it tasted even better after it had sat in the dressing for longer. The flavour was stronger!

This salad was a hit!
