Tilapia and Gluten Free Noodles on Wilted Spinach

I cooked a very last minute dinner for my sister and me this past weekend. I hadn't yet done groceries but knew I had fish in the freezer, spinach in the fridge and some pasta in the pantry. The following recipe is what I came up with!

Tilapia and Gluten Free Noodles on Wilted Spinach

Ingredients

  • 2 tilapia filets

  • 1-2 tbsp olive oil

  • Cayenne pepper to taste

  • Mrs dash onion and herb to taste

  • Pink Himalayan salt to taste

  • Sweet potato buckwheat noodles (King Soba)

  • 2 cups (loosely packed) spinach

Tilapia:

  • Preheat oven to 375Fº

  • Place two filets of tilapia on a pan.

  • Drizzle with olive oil

  • Sprinkle cayenne pepper, Mrs Dash onion and herb and some pink Himalayan salt

  • Bake for 20 minutes

Noodles:

  • While the fish bakes, bring a pot of water to rolling boil

  • Add in noodles and keep boiling for 4-6 minutes

  • Drain the water out

  • Drizzle with some olive oil and mix to coat it evenly

Place spinach in a deep plate and top with pasta. Sprinkle Parmesan garlic seasoning atop the pasta. Place tilapia on top and voila, your dish is ready!
