Protein Pancakes
Craving some breakfast food? Yeah, me too!
Since I started getting my eating habits back in check I'm not ready to indulge just yet. I don't trust myself at the moment.
The solution? Healthier pancakes that fit with my goals.
I didn't need too many ingredients, see? (Recipe after the picture!)

Egg White Protein Pancakes
Ingredients
1/2 tablespoon coconut oil to grease the pan
1 scoop Protein powder of your choice (I used Perfect's Diesel protein powder in Chocolate Peanut Butter flavour)
1/2 cup egg whites
1/2 cup chocolate chips (I used Enjoy Life vegan dark chocolate chips)
Almond milk - enough to make the chocolate liquid-y and easy to pour over the pancakes
Directions
Place coconut oil in a small pan
In a bowl whisk together the protein powder and egg whites. If you want the consistency to be thicker add more protein and vice versa)
Put stove on medium heat and melt the coconut oil to coat the pan
Pour mixture into the pan - just enough to cover the bottom of the pan
When the pancake begins to bubble on top, flip it over to cook the other side
microwave the chocolate chips and almond milk for 20 seconds at a time mixing in between until you reach your desired consistency
Place pancakes on a plate, pour the chocolate over and ENJOY your healthy treat!!!!
Here is my finished product. I apologize for not taking pictures of the process, I was too excited that I would get to eat these..

Note: If you make the mixture a little thicker you can make mini pancakes. These also taste amazing with almond butter or peanut butter.
