Chocolate Chip, Banana, Spelt Muffins
Last night I took the night off from the gym because I was exhausted and have been feeling under the weather the past few days. While watching Cake Boss I decided I wanted to bake something. So after checking out what ingredients I had I went hunting for a recipe and ended up taking a random recipe and adapting it to my needs and stupidity. Keep reading for the recipe!
Chocolate Chip Banana Muffins
Vegan! Gluten free (sort of)!
Ingredients
• 1 1/3 cups spelt flour • 1/2 cup coconut palm sugar • 1.5 tsp baking soda • 1/2 tsp pink himalayan salt • 3/4 cup gluten free quick oats • 1/2 cup vegan mini chocolate chips • 2 very ripe bananas • 1/3 cup coconut oil • 2 tsp vanilla extract • 1/3 cup unsweetened almond milk
Instructions
Preheat oven to 375°F. Line a muffin pan with paper cups or spray with cooking spray.
In a large bowl, stir together dry ingredients (flour, sugar, baking soda, salt, oats, chocolate chips)
In a separate bowl, blend together wet ingredients (bananas, coconut oil, vanilla, almond milk)
Pour wet ingredients into dry ingredients and stir until just mixed.
Spoon mixture into muffin tin. Bake for 20 minutes.
Remove from oven, let cool slightly, then enjoy a warm and delicious muffin!!!!

Notes
I didn’t have baking powder so I put a little extra baking soda. Substitution for baking soda doesn’t actually work that way so I got lucky that these came out as good as they did. There was also supposed to be another 1/3 cup of almond milk but I forgot. I would add in some protein powder next time because I feel this recipe could use more protein.
