Chicken Meatballs in Jerk Tomato Sauce
Well I took on Tuesday off last week from Taste-Tastic Tuesday... But this week, prepare yourselves for a fabulous recipe!
I can not believe I have never tasted jerk seasoning until now. How did I live without it? It helped me create this delicious dish.

Chicken Meatballs in Jerk Tomato Sauce
Ingredients
1 package ground chicken
2 eggs
3 tablespoons spelt flour (I didn't have breadcrumbs!)
1/2 cup grated carrot
1 tablespoon extra virgin olive oil
1 can diced tomatoes
1/2 cup diced onion
Jerk seasoning to taste
Directions
In a bowl combine ground chicken, eggs, flour and carrot. Make sure it is well mixed together.
Coat frying pan in olive oil and heat to medium/high.
Form meat balls with the chicken mixture and place them in the frying pan.
Cook until slightly browned on all sides. Remove from heat.
Blend together diced tomatoes (with liquid), onion and jerk seasoning.
Pour into a pot and place the meatballs inside.
Bring to a boil then lower heat to simmer for about 10 -15 minutes.
Eat and be amazed!
Notes: I paired this with brown basmati rice and mashed sweet potato. Both are really easy to make. The rice is cooked using 1.5 cups of water for 1 cup of rice and the mashed potatoes are literally boiled sweet potatoes and cinnamon. Nothing else!
