Lemon Dijon Chicken Thighs

Today I bring to you a recipe for dijon chicken that I whipped up myself. Keep reading to find out how to make it and what to pair it with!

Chicken, quinoa and sautéed veggies:

Lemon Dijon Chicken Thighs

Ingredients
  • 5 or 6 boneless skinless chicken thighs

  • 3 tablespoons grainy dijon mustard

  • 2 tablespoons lemon juice

  • 2 tablespoons extra virgin olive oil (one for the chicken and one for the pan)

  • Spices of your choice

Directions
  1. In a bowl, mix together chicken, mustard, lemon juice and olive oil until chicken is well coated.

  2. Heat large frying pan on medium heat on the stove and use other tablespoon of olive oil to coat it.

  3. Place chicken in pan in a single layer

  4. Sprinkle with spices of your choice

  5. When the bottom starts to brown slightly, flip over each piece and continue cooking until thoroughly cooked!

  6. Enjoy your meal :)

Chicken paired with cooked red lentils and chopped spinach (you can't really see it but it's there!):

Notes: I made this twice already. The first time I paired it with red lentils and was not very impressed. The second time I paired this with quinoa (cooked with garlic, fresh rosemary and spices) and sauteed vegetables and my taste buds were very happy.

It was delicious, healthy and budget friendly as chicken thighs are much cheaper than chicken breasts.
