Peanut Butter Oatmeal Energy Balls
Another Tuesday, another recipe for my readers! For Taste-Tastic Tuesday this week I am sharing a recipe that I tried out for the first time on my coworkers yesterday.
These energy balls are moist, delicious and healthy.
Peanut Butter Oatmeal Energy Balls
Ingredients
1 cup (dry) steel cut gluten rolled oats
1/2 cup unsweetened shredded coconut
1/2 cup natural peanut butter
1/2 cup ground flax seed meal
1/3 cup honey (or more if you find its not stick enough)
1 teaspoon pure vanilla extract
1/2 cup mini vegan chocolate chips
Directions
Combine all ingredients in a medium sized bowl
Place bowl in the freezer for a few minutes
Remove mixture from freezer and form 1 inch balls and place on a cookie sheet or large plate
Refrigerate the balls for a few minutes until firm then transfer to an air tight container
Keep the container in the fridge until you are ready to eat them!

Notes: I put way too many chocolate chips in mine as I was trying to finish the package that I had on hand. This actually made it harder to roll into a ball! I also used mini cupcake liners to hold each energy ball as it was a cute way to present it.

These were a hit at the office and are definitely a great boost of energy. You can substitute all kinds of ingredients in to this recipe - switch up the nut butter, use goji berries or other dried fruit instead of chocolate chips. You could even add in some chia seeds for an extra superfood kick! The possibilities are endless.
