Moroccan Style Salmon
Well I have been keeping up with my fitness goals for 2015, and that includes cooking more often.
My best friend in the world shared her mom's salmon recipe with me.I am now sharing it with all of you because it is THAT good. Yesterday I made it for the second time and it came out better than the first. Practice makes perfect?

Moroccan Style Salmon
Ingredients:
4 salmon filets
Juice from two lemons
1/3 cup of water
4 tablespoons olive oil
1 tablespoon turmeric
1 tablespoon paprika
8 cloves of garlic
1 or 2 lemons, quartered
Directions
In a small bowl whisk together the olive oil, turmeric and paprika.
On high heat, place salmon filets in a deep pan that has a lid.
Pour in lemon juice and water
Pour olive oil mixture over the filets
Drop the garlic cloves and quartered lemon in to the pan (spread them out!)
When the liquid is boiling, lower the heat and cover your pan.
Let the ingredients simmer for about 40 minutes
Eat and enjoy!!
Side note - I used a package of frozen salmon filets from my local grocery store as opposed to fresh filets. I did not defrost them, rather I cooked them straight from frozen and they came out perfectly. For a side dish I sautéed diced sweet potato in a pan with some olive oil. When they were halfway done I added red and yellow pepper, garlic powder, ground ginger and black pepper. Since I had some leftover quinoa I paired that with it as well.
