Yummy and Healthier Treats

So fitness has nothing to do with my day job. I work at an investment firm supporting 3 great investment advisors run their businesses. One of them celebrated their 32nd birthday last week so I decided to bake him some treats to honour the special day.

I went with flourless fudge brownies and vegan chocolate chip cookies. They were a hit with everyone at the office, particularly the cookies!

Dairy Free and Gluten Free Brownies

Ingredients
  • ½ cup organic raw cacao powder

  • ½ cup flaxseed meal

  • 1 teaspoon baking soda

  • ½ teaspoon pink himalayan salt

  • ½ cup coconut milk, full fat

  • 1 egg

  • 1 teaspoon pure vanilla extract

  • 4 tablespoons organic raw honey

  • 1 tablespoon almond butter

  • ¼ cup chocolate chips (vegan)

Directions
  1. Pre-heat oven to 350°F

  2. In one bowl mix together the cacao powder, flaxseed meal, baking soda and salt

  3. In another bowl whisk together the coconut milk, egg, vanilla, honey and almond butter

  4. Gently mix wet and dry ingredients to form a batter

  5. Fold the chocolate chips into the batter and pour it evenly across the bottom of a 8×8 inch foil pan that has been greased with coconut oil

  6. Bake until a toothpick inserted into the center comes out clean, about 15-20 minutes

  7. Cool then cut into squares

Vegan Chocolate Chip Cookies

Ingredients
  • ½ cup coconut oil

  • 1 cup coconut palm sugar

  • ¼ cup almond coconut milk (Almond Breeze)

  • 1 tablespoon pure vanilla extract

  • 2 cups spelt flour

  • 1 teaspoon baking soda

  • 1 teaspoon gluten free baking powder

  • ½ teaspoon pink himalayan salt

  • 1 cup vegan chocolate chips

Directions
  • Pre-heat oven to 350 degrees

  • Thoroughly mix together the coconut oil & coconut palm sugar, then add the almond milk & vanilla. (I found that microwaving the mixture for 20 seconds before mashing it up helped a lot)

  • In a separate bowl mix the spelt flour, baking soda, baking powder and salt.

  • Combine the wet & dry ingredients (it will be crumbly – this is OK), then fold in the chocolate chips

  • Roll into Tbsp sized balls & place them on parchment paper on a baking sheet then flatten them out a bit with your palm. The dough will be crumbly, but just smoosh it together and it will work fine!

  • Bake for 7-10 minutes. (I went to 10 but I have a gas oven)
