Chia Oatmeal Cookies (GF, DF)
Having gone through some stressful times the past little while, this weekend was the first time in a long time that I really felt like myself again. I’m not sure why, but I’m not questioning it!
I ran errands, cleaned, cooked, trained a client, slept AND watched the latest episode of Homeland (very important).
I took the time to bake some cookies to bring to the office as a healthy treat for the people that I spend most of my waking time with.
Chia Oatmeal Cookies (Gluten free, Dairy free)
Ingredients

1.5 tbsp chia seeds
1/4 cup almond coconut milk
2 ripe bananas, mashed (I had frozen ones and had to let them defrost first)
3/4 cup oatmeal (gluten free)
1/4 unsweetened shredded coconut
1 tbsp almond butter
Lots of cinnamon
1/4 cup dates, chopped
1/2 cup chocolate hips and chunks (EnjoyLife – vegan!!)
Directions:
Preheat oven to 350 degrees fahrenheit and prepare a cookie sheet lined with parchment paper.
In a small bowl, stir together the chia seeds and almond milk and let the mixture sit for about 10 minutes, or until the chia seeds have created a nice gel-like consistency.

Pour the chia seed mixture into a larger bowl and add in the mashed bananas, oats, shredded coconut, almond butter and cinnamon. Stir until well combined.

Stir in the chopped dates and chocolate chips/chunks


Scoop out mixture onto baking sheet and press down a little to make more of a cookie shape.

Place in the preheated oven and bake for 17-20 minutes, or until the bottom of the cookies have browned a tiny bit. Let cool after removing them from the oven and taste how yummy these are!

I got 12 cookies out of this recipe. And right now I have none left after sharing them at work!
