This past weekend was a long weekend due to Victoria Day. I took it easy and took advantage of the extra time to work out, relax and bake cookies!
Saturday morning was bootcamp as usual followed by visiting my dad. We cooked lunch and stored leftovers for the next few days. This is a go-to meal of mine – super healthy plus it is protein/nutrient packed.
Quinoa and Veggies
In a large pot pour in the desired amount of quinoa and chopped vegetables of your choosing. Pour in the proper amount of water or broth (quinoa has a ratio of 2:1 so if you used 2 cups of quinoa, you need 4 cups of water). Sprinkle with whatever spices you want, mix it up, and let it cook for about 15-20 minutes. You can stir every once in a while. The meal is ready when all the water is absorbed.
Sunday morning I tried out an olympic lifting class. I think this will be a new Sunday ritual for me as it is a great way to learn skill and technique. I am already good at the lifts and am building up how high I can go with the weight but I need to ensure that my form is spot on if I want to train people one day!! Following the class, I helped a friend of mine with her groceries and showed her how to make something similar to the quinoa dish above. I’m thinking this is something I want to offer down the road to complement the personal training.
Now, Monday was a day off from work. I baked cookies in the morning (recipe to follow after the workout) then went to bootcamp!
The WOD was fun, intense, difficult but rewarding.
We paired up Good Mornings (weighted move) with 4 ab exercises. So the workout looked like this:
40 good mornings
20 toes to bar
30 good mornings
30 gluteal hamstring sit-ups
20 good mornings
30 knees to elbow
10 good mornings
I did these using 75 pounds! This was a personal record for me on this move. I am so sore today but loved every minute of that work out (all 23 minutes and 20 seconds that it took..)
I brought cookies with me to the gym for my friends to try and they were a hit! These cookies are super healthy, dairy free, grain free but packed with flavor.
Almond Butter Chocolate Chip Cookies
1 cup almond butter
1/3 cup honey
1 tbsp vanilla
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2/3 cup shredded, unsweetened coconut
1/2 cup dark chocolate chips (Enjoy Life – Vegan!!)
Preheat the oven to 350 degrees
Line cookie sheets with parchment paper
Stir together first 7 ingredients. Mix well and ensure that honey is fully incorporated
Add coconut and chocolate chips and mix until well combined
Place on cookie sheet with enough space in between (I ended up using a spoon and rolling them into balls before placing them on the sheet).
