Mmmmmuffins!!!!
I got the urge to bake last night. I knew I still had flour, baking powder and sugar along with chocolate chips in the fridge. I did some research and found a simple, easy, relatively healthy (compared to many others) recipe.
So, today I decided to bake. This is a link to the recipe. I did change it up a bit because I despise bananas and only had spelt flour on hand. I also followed a tip from the comments below the original recipe that said to mix all of the wet ingredients then add in the dry ones. I will share my version of the recipe below.
Whole Wheat Chocolate Chip Muffins
Ingredients

1/2 cup margarine
1/2 cup natural cane sugar
2 1/2 cups whole spelt flour
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
2 teaspoons vanilla extract
1 cup unsweetened applesauce (to replace 2 mashed bananas)
1/2 cup dairy free chocolate chips
1 1/2 cups regular unsweetened soy milk (to replace water)
Directions
Preheat oven to 350 degrees. Prepare muffin tins (I used pretty liners that I found at the grocery store this morning)

Mix margarine, sugar, vanilla, applesauce, milk and chocolate chips in a large bowl.

Once mixed, add in the flour, baking soda and baking powder.

Make sure everything is mixed in properly then scoop into each muffin cup making sure to fill them abut 2/3 of the way.

Place in the oven for 20 minutes (trial and error led me to this time). Remove from oven, let cool and enjoy!!! I sprinkled some chocolate chips on the muffins before placing them in the oven to bake, that is why mine have visible chips on the top. I got 21 muffins out of this recipe (the original yields 12, but the spelt flour behaves differently than regular flour. I'm sure the applesauce does too..)
